Potassium Metabisulphite is used for sterilising and stabilising wine. Used to kill the wild yeast in fruit or grapes. This enables the cultured yeast we add to the wine to take a larger foot hold in the fermentable sugars giving a better end result and flavour.
CRUSHING: Use 50g - 75g per 100L of must to kill bacteria on the grapes or fruit PRIOR to adding yeast
